The Perfect Oatmeal!

I was watching a episode of Oprah that I recorded last week, thank you whoever invented the DVR! Anyhow it was about three chefs, Iron Chef Cat Cora, Curtis Stone and Tyler Florence. They went into the homes of three average families and taught them a weeks worth of meals that are healthy and inexpensive. Some meals were only $3-$4 to prepare! The WHOLE meal. So I got online and got the recipes (email me if you want a copy in ms word) I have all the recipes with easy find links to each so you don't have to copy or write them all down.

So on to my point...

I made Tyler's "The Perfect Oatmeal" and I have to say it was amazing! I like oatmeal anyway, but this is such a healthier version and who knew it would be this good?

So on for the recipe... I know some of it sounds strange, but try it.

1 cup quick-cook oats
2 cups unsweetened apple juice
1/4 teaspoon cinnamon
1 Tablespoon unsalted butter ( I used my regular butter)

It says to heat apple juice, apple sauce and oatmeal on stove for 7-8 minutes or until creamy, but I just threw mine in a Tupperware container and put it in the microwave for like 4-5 minutes. Add cinnamon and butter. Top with the following toppings:

It calls for
1/2 cup applesauce (I didn't mix this in the first step, just put it on individually)
1 cup fresh blueberries (couldn't find any so didn't use any)
1/2 cup toasted coconut (sounds strange but soooo good)
1 large banana sliced (again strange but very good)
And milk (if needed)

So it was such a hit that Darin asked me this evening to make it again tomorrow morning!
