Abbey wanted to make Kyle a cheesecake for his birthday on Monday and she wanted to make a pumpkin cheesecake. I have never made one, but found a recipe from pioneer woman and decided to give it a try. Boy, am I glad we made it. It was melt in your mouth smooth as silk pumpkin pie cheesecake deliciousness.
I did have a problem with the crust coming out hard as a rock because of the caramel, like many others that had tried the recipe had commented. I don't know if it was because of the gingerbread cookies I used, because I used the same caramel she did, but it was still delicious.
